Why bakers love it
Roll right to the edge and you've got the right size crust, every time. Works perfectly for a nine inch extra deep foil pan.
Because you're rolling on a raised board, you can easily slide a bench scraper under the dough to move your crust into the pan.
The large side is perfect for a classic fluted single crust, or the top crust of a heavily mounded double crust pie like apple. Use the small side for bottom crusts, and for double crust pies that aren't heavily mounded, like our grape pies.
